If you’re working in the Linux console alone, you could also ssh into your Pi and, for instance, have your local machine on virtual console tty1 and the Pi on tty2, switching between them with ALT+Fx. Still only one monitor. 😜

If your Debian’s process manager is systemd, then

sudo journalctl -f -e -u tor@default  

Also, if I’m not mistaken, your speed can never be faster than the next node that you are connected to. Unless you are running an exit node, that is.

I’d try to stay away from isolated projects on GitHub that only have a single maintainer, to avoid the risk of installing malware. You could check the https://aur.archlinux.org/ to see if any of those have been uploaded here and if there are any comments on the package. If there are none but you still would like to install, check out this guide to learn how to vet the “installer”.
